Cheap and cheerful, and great if the only carbs you have in the cupboard are bog standard potatoes. If you want to make this a bit more fancy, get some greens in! (we recommend runner beans & broccoli)
Ingredients:
- Olive oil (2 tbsp)
- 4 tbsp butter (unsalted or salted, doesn’t matter)
- Potatoes (as many as you want)
- Half a lemon
- Breadcrumbs (1 pot)
- 1 egg
- Splash of milk
- 150g flour
- Chicken breast (as much as you have left!)
Method (cooking time 15min, preparation time 5):
- Put a pot of water on to boil. While this heats up peel & cut the potatoes into quarters so they don’t take forever to cook. Put to one side.
- get yourself 1 bowl, and two plates.
- On one plate, pour out the flour and shake so it is even on the plate.
- Crack the egg into the bowl and add a splash of milk. Whisk with a fork until blended.
- On the other plate, pour out a generous amount of breadcrumbs.
- Take your chicken breast, and if it is too thick, slice evenly down the middle to create two thinner breasts.
- coat each side with flour, then coat with egg, then coat with breadcrumbs.
- Repeat (this gets messy, so you may have to wash your hands in-between)
- Once your breasts are breadcrumbed (ha), get yourself another bowl.
- In this bowl, squeeze out juice from half a lemon. Add 2 tbsp of olive oil, a pinch of salt and pepper and mix. Leave this for later!
- Your water should be boiled by now, so add the patatas!
- The potatoes should take no longer than 11-12 mins to cook.
- Get yourself a frying pan, and put on a low heat. Add one tbsp of butter and let it melt.
- Once the butter is hot enough, add your chicken breasts!
- Do not turn the heat up, as this will burn the butter and burn ya breasts.
- After around 4 mins of cooking on one side, flip over. Add a bit more butter!
- Repeat this again so each side has been cooked on twice. Take the potatoes off!
- If you are skeptical when cooking chicken, just cut it in half to check that it isn’t pink in the middle, and that way you won’t die.
- time to plate up. Pop the potatoes on your plate. Spoon over that nice lemon and olive oil dressing you made earlier.
- Put chicken on plate.
- eat & enjoy!
