Eating healthy as a student can, at times, be a struggle for many; it usually takes time, money and patience we don’t have or that we’d rather spend elsewhere – i.e. ASOS and/or Topshop.
It’s also common knowledge that good food requires a lot of practice and a never ending list of ingredients you’ve probably never heard of, right?
WRONG. You’ll be shocked – as I was, no kidding here – to know just how easy and cheap it can get to make something as delicious and healthy as this sweet peppers and olives recipe!
What you’ll need is just:
- a couple of sweet peppers – possibly 1 red and 1 yellow
- olive oil
- black olives
- bread crumbs
Just slice the peppers into slim slices, put them in a large pan covered in a small layer of olive oil and cook until the peppers soften a little (it will take around 10-15 mins, depending on your kitchen oven). You can then add olives and bread crumbs and wait until it’s fully cooked. Ta-da, dinner’s ready!
