Comfort food doesn’t always have to be bad for you, who said you can’t cure your heartbreak with some healthy food?
Now, before making fun of me, hear me out. I have to find healthy ways if I want to binge eat something or my stomach will complain, a lot.
But this recipe is not really a recipe, it’s a simple sandwich that tastes oh so bloody good. And, if you don’t trust me, you can make it yourself and see!
Unfortunately, I learned the hard way that my stomach doesn’t handle Nutella or any other chocolate spread for that matter. So what am I supposed to do when I crave a really unhealthy sandwich? Make a healthy one, duh. Don’t get me wrong, this is still a sandwich with a lot of fats in it, but these are healthy fats (come on, at least try and be excited)!
It’s simple but very tasty (and I often have it for lunch, dinner o multiple times in a day).
1 jar of green/black olives (you can eat the rest of it once we’re done if you want)
2 slices of your favourite bread (I personally like to use baguette)
a handful of rocket salad
a handful of sun-dried tomatoes (or, in alternative, just tomatoes)
salt and pepper
So now all you need to do is assemble your sandwich. Hummus (if used) has to go on the bread first – sort of like butter, but better. In a separate bowl mash the avocado with some salt and pepper. If you want, you can add some lemon and/or lime to it to make it taste even better. Spread that over the hummus (or bread), add tomatoes, olives and rocket salad and you’re all done.
To make it taste even more delicious, try toasting the bread either before or after making the sandwich.
This will fill you up, trust me, whilst still giving you the impression of eating junk food. It also tastes amazing, which is definitely a plus!
