Bored of having pasta for dinner? Don’t worry, I’ve got your back.
Last year I mastered the art of couscous (highly doubt that’s true, but let’s pretend it is!) and it has slowly become one of my favourite things to eat. This recipe includes some veggies as well and a few yummy spices that’ll make your dinner taste great and will do nice things to your body (not in a weir way of course…)
40g of couscous
1 can of chickpeas
1 sweet pepper
1 can of sweetcorn
First things first, boil some water and put your couscous in a bowl with some salt and a drizzle of olive oil. Pour the water into the bowl until halfway full, cover it with a plate and leave it for 10/15 minutes.
Cut your pepper, put it in a bowl and add sweetcorn and chickpeas. Add couscous once ready and mix well. Add as much paprika and cumin as you want – I usually add some more salt as well, but that is completely up to you.
Toast a couple of pita bread, slice them open and stuff them with your couscous and veggie mix.
It tastes insane, it fills you up and it doesn’t take long at all!

- paprika contains vitamin A, carotenoids, vitamin E and iron.
