I always have tins of beans in my store cupboard and I don’t mean the Heinz variety! Pulses are a great way of adding fibre to your diet and don’t cost the Earth. They are low in fat and can add substance to many meals.
Cannellini beans are a favourite of mine as they can be made into homemade baked beans, a mash potato alternative or, like I have done here, a fabulous fritter. These little fritters are so easy to make and taste divine.
Feel free to substitute the spinach for another vegetable. Try left over roasted pumpkin or grated courgette.
Ingredients
Serves 2-3
30 minutes
1 Tin Cannellini beans, drained and rinsed
1 handful of fresh spinach, finely sliced
3 spring onions, finely sliced
Fresh parsley, finely chopped
1 small chilli, finely chopped
2 tablespoons plain flour
1 egg, whisked
Salt & Pepper to taste
Rapeseed or olive oil to fry.
Method
Put all of the ingredients, apart from the oil, in a food processor and pulse until you get a chunky paste. Alternatively you can mash ingredients with a potato masher.
Heat the oil in a heavy frying pan.
Form into little patties, approx 6-7cm diameter, and fry on each side.
Serve with a salad or as part of a mezze feast. Also delicious stuffed in warm pita bread with some tzatziki. Yummy!
